Boerewors - Farmers Sausage  - South Africa's Famous Sausage

2Kg lean beef (venison)
1Kg pork
300gms spek (pork fat) cut up finely
25ml crushed coriander seeds
2ml ground cloves
2ml ground nutmeg
120ml brown vinegar
10ml salt

Mince beef and pork together, add spek and mix well. Add dry ingredients, mix very well. Add vinegar and mix again.

Let stand for 3 hrs to allow the spices to infuse.

Stir well and loosely stuff mixture into sausage casings. Cook over an open fire with moderate coals ,or grill in the oven, turn regularly.
