Double Salsa Burgers
1 large tomato, seeded and thinly chopped
1/2 cup of finely chopped green sweet pepper
1/2 cup of finely chopped red onion
2 jalapeno peppers, seeded and finely chopped
1 tablespoon of snipped cilantro
1 clove garlic, minced
1/4 teaspoon of salt
1 1/2 pounds of lean ground beef
2 cups of shredded lettuce
1/3 cup of shredded cheddar cheese
1/4 cup of dairy sour cream or guacamole
For salsa, in a medium bowl combine the tomato, green pepper, onion,
jalapeno peppers, cilantro, garlic, and salt. Set aside 2 tablespoons of
the salsa. Cover and chill the remaining salsa until serving time.
In another medium bowl combine the ground beef and 2
tablespoons of salsa, mix well. Shape the mixture into six 1/2 inch
thick oval patties.
Grill patties on an uncovered grill directly over
medium coals for 12 to 14 minutes or until the meat is no longer pink,
turning once. Arrange shredded lettuce on dinner plates. Top with
patties, remaining salsa, and cheddar cheese. Serve with sour cream and
or guacamole.
