Squash Relish
12 cups grated squash
4 cups chopped onion
2 green peppers, chopped
5 Tbsp salt
Mix the above ingredients together, place in a colander and let
drain overnight. The next day make a sauce of the following:
2-1/2 cups white vinegar
5 cups sugar
2 Tbsp pickling spice
1 teas tumeric
1 teas celery salt
Bring all ingredients to a boil and then strain Pour over the
squash and mix well
Bring to a boil and then put in jars and seal. |
