Boiled Mutton
A Favourite of the Camdeboo Farmers of the Karoo

A Joint of Mutton
1Tbs salt
1 Bay leaf
1 Onion chopped

Take a joint of mutton and place in a pot on the fire or on top of the stove, add bay leaf and onion (the best is a cast iron pot over an open fire) cover with boiling water, simmer until meat is tender. After 30 mins cooking add salt. Serve with Caper sauce

Caper sauce

125 ml Capers
100 ml butter 3Tbs flour
375ml mutton stock
5ml lemon juice
salt and pepper

Melt half the butter, add seasoned flour, and mix well. Slowly add stock to mixture. Gently bring to boil for a few minutes. Add lemon juice and remaining butter. Add Capers. Allow to stand for 15 min. Warm when required
